Fact date February 2007 Image Wagyu beef marbling detail.jpg thumb right Extensive fat marbling in slices of high grade Wagyu beef Feed Marbling can also be influenced by time on feed and type of Fodder feed . The longer that a pen of beef cattle are on feed on the feedlot the higher the chance that they will grade higher on quality scores but have much lower yield grades percentage of carcass lean to fat ratio . Feeding a high amount of cereal grains such as Maize corn or barley will change the color of the carcass fat from a yellowish to a white, plus increase the chance of obtaining a higher quality grade according to the USDA. It can be risky to feed a cattle too much grain to increase marbling, because it can cause acidosis . Cattle are ruminants their stomachs are better at digesting grass, not grain. Unreferenced date August 2007 A meat slurry , reconstituted meat , or emulsified meat is a liquefied meat product that contains fewer fats, pigments and less myoglobin than unprocessed dark meat s. Meat slurry also eases the process of meat distribution and is more malleable than dark meats. Meat slurry is not designed to sell for general consumption rather, it is used as a meat supplement in food products for humans, such as chicken nuggets , and food for domestic animals. Poultry is the most common meat slurry however, beef and pork are also used. Properties and production Dark meat from poultry is often viewed as less palatable in Western countries because of its color, low plasticity and high fat content.
