  1. Flash freezing

Flash freezing or blast freezing refers to the process in various industries whereby objects are quickly frozen by subjecting them to cryogenic temperatures. For example, flash freezing is used in the food industry to quickly freeze perishable food items see frozen food . In this case, food items are subjected to temperatures well below water s melting point melting freezing point 32 F or 0 C , causing the water inside the foods to freeze in a very short period of time without forming large crystals, thus avoiding damage to cell membranes . Flash freezing techniques are also used to freeze biological samples fast enough that large ice crystals cannot form and damage the sample. ref cite web url http www.biotech.ufl.edu EM data freeze.html title Freezing Tissue publisher Biotech.ufl.edu date accessdate 2009 07 03 ref This rapid freezing is done by submerging the sample in liquid nitrogen or a mixture of dry ice and ethanol. ref cite web url http www.personal.psu.edu dsg11 labmanual DNA manipulations Comp bact by RF1 RF2.htm title Preparing Competent E. coli with RF1 RF2 solutions publisher Personal.psu.edu date accessdate 2009 07 03 ref A supercooled liquid will stay in a liquid state below the normal freezing point when it has little opportunity for nucleation that is, if it is pure enough and has a smooth enough container. 1. Snap freezing

merge Flash freezing discuss Talk Snap freezing Merger proposal date November 2008 Unreferenced date February 2007 Snap freezing or cook chill or blast freezing is the process of cooking meals until they are almost done and then rapidly chilling them. The process involves the preparation and cooking of meal s at a central factory, rapidly chilling them for storage until they are needed. Cook chill foods need to be packed in shallow trays to make the process more efficient. The food is cooled to a temperature under 3 degrees Celsius within 90 minutes of cooking and stored at a maintained temperature of 0 to 3 degrees Celsius. The meals can then be transported in refrigerated transport to where the food is to be reheated and consumed when needed. The length of storage depends on the method used but is usually five days. For longer storage the food may be subjected to pasteurization after cooking. The main target group for these products are people who have no time to spend cooking. These products are ideal because they are so easy. Typical categories would be school s, pensioner s and possibly hospital s. These processes have the advantage that the preparation and cooking of the meals is not tied to the times when the food is to be served enabling staff and equipment to be used more efficiently. A properly managed operation is capable of supplying high quality meals economically in spite of the high initial equipment costs. There are potential problems, however. In particular, careful attention has to be paid to hygiene , as there are a number of points in the process where food pathogens can gain access. This requires careful attention to both the control of the process and to staff training. Snap freeze is a term often used in scientific papers to describe a process by which a sample is very quickly lowered to temperatures below 70 C. This is often accomplished by submerging a sample in Liquid nitrogen . See Also Flash freezing Blast chilling Category Food preservation ...   more details

  1. Surface freezing

unreferenced date July 2009 Orphan date February 2009 Surface freezing is the appearance of long range crystalline order in a near surface layer of a liquid . The surface freezing effect is opposite to a far more common surface melting , or premelting . Surface Freezing was experimentally discovered in melts of alkanes and related chain molecules in the early 1990 s independently by two groups. John Earnshaw and his group Qeen s University of Belfast used light scattering, which did not allow a determination of the frozen layer s thickness, and whether or not it is laterally ordered. A group led by Ben Ocko Brookhaven National Laboratory , Eric Sirota Exxon and Moshe Deutsch Bar Ilan University, Israel discovered independently the same effect, using x ray reflectivity which allowed them to show that the frozen layer is a crystalline monolayer, with molecules oriented roughly along the surface normal, and ordered in an hexagonal lattice. A related effect, the existence of a smectic phase at the surface of a nematic liquid bulk was observed in liquid crystals by Jens Als Nielsen Riso National Laboratory, Denmark and Peter Pershan Harvard University in the early 1980 s. However, the surface layer there was neither ordered, nor confined to a single layer. Surface freezing has since been found in a wide range of chain molecules and at various interfaces liquid air, liquid solid and liquid liquid. 1. Freezing level

Image Iso0.png thumb The 0 C isotherm under normal conditions The freezing level , or 0 Celsius C zero degree isotherm contour line isotherm , represents the altitude in which the temperature is at 0 C the freezing point of water in a free atmosphere i.e. allowing reflection of the sun by snow, etc. . Any given measure is valid for only a short period of time, often less than a day. Above the freezing level, the temperature of the air is below freezing. Below it, the temperature is above freezing. The profile of this frontier, and its variations, are studied in meteorology , and are used for a variety of forecasts and predictions. Whilst not given on general weather forecasts , it is used on bulletins giving forecasts for mountainous areas. Measuring There are several different methods to examine the structure of the temperature of the atmosphere A radiosonde attached to a weather balloon is the oldest and most common method used. Each area releases two balloons a day in locations hundreds of kilometres apart. Measuring devices attached to commercial airliners permit reporting the isotherm, and its height, to aerial traffic. Weather satellites are equipped with sensors which scan the atmosphere and measure the infrared radiation it emits. Weather radar detects Weather radar Bright band bright bands , which are radar echoes produced just underneath the isotherm caused by the melting of snow in the layer above 0 C. A wind profiler , an upward pointing radar, can detect the speed of precipitation, which is different for rain, snow, and melting snow. Depending on the frequency and Sensor resolution resolution at which these readings are taken, these methods can report the isotherm with greater or lesser precision. Radiosondes, for example, only report a reading twice daily and provide very rough information. Weather radar can detect a variation every five to ten minutes if there is precipitation, and can scan a radius of up to two kilometres. Characteristics The isotherm ...   more details

The West Coast Meat and Produce Export Company was formed in August 1883 and operated a tinning plant and tallow factory in the area. Changes in technology saw the company change from canning to freezing in 1904. The Patea Freezing Company came into being in 1910. In 1933, a new Patea Freezing Company was formed and at times provided work for nearly 1000 workers during peak season. However, the company suffered badly during the downturn in the New Zealand meat processing industry in the early 1980s. The Patea works were among the first to close down, ending operations in September 1982. At the time The Patea abattoir Freezing Works was owned by the British Vestey Group .
